Open Ended Toys
So many toys on the market today have only one function and tell kids how they have to play. Think about the toy commercials around Christmas time. The ones the kids beg for, but you know will only be exciting for a week or two before they lose their excitement or get broken.
My favorite thing about open ended toys is that kids never tire of them. There are building sets we've had for years that still get played with a few times a week. They may be a bit more expensive upfront, but we've definitely gotten our moneys worth out of them. They've held up through 3 kids and several years of rough play and are still in awesome condition.

Grimm's wooden toys
Grimm's wooden toys are gorgeous and really exercise a child's imagination. All of their toys are made with non-toxic dyes so they're totally safe (even if a teething baby gets ahold of them). They are pricey, but are made to last year after year. Grimm's has way more toys than listed here, so be sure to check them all out!
Tumi Ishi Stacking Rocks
Tumi Ishi are wooden stacking rocks. They are kind of like reverse Jenga. Instead of trying to take blocks away, the objective is to see how high you can stack.
